This yummy recipe is one I got at a dinner party around fifteen or twenty years ago. I loved it so much I asked for the recipe and I’ve been making it ever since. Every time I make it it’s a hit and I usually get asked for the recipe.
You’ll need four medium yams cooked and peeled or two 16 ounce cans (I use the cans – it’s faster and easier)
Put in a medium to large bowl.
Add two eggs
Add 1/2 cup of light or dark brown sugar
Add 1/3 cup of melted butter
And 1 teaspoon of salt
Mix together well until creamy.
Place in a casserole dish.
Top with 1/2 cup of pecans.
Bake at 350 degrees for twenty minutes.
The pecans will be nice and toasted when done.
While the casserole is baking make the orange sauce topping.
To make the orange sauce place the following ingredients in a double boiler.
One cup of orange juice
One teaspoon of cornstarch
1/8 teaspoon of salt
One teaspoon of grated orange peel
One teaspoon of lemon juice
Bring to a boil over medium heat, stirring constantly until sauce thickens.
Remove from heat and stir in two teaspoons of butter.
Pour a small to liberal amount over potato casserole – enough to cover. Place the rest of the sauce in a serving dish for additional sauce for those who like more (like me).
Now sit down and enjoy the best sweet potato casserole ever!
