EASY, TASTY HOLIDAY SIDE DISHES!!

 

Like a lot of people I have several holiday dinners and gatherings at my house during the holiday season.  And, it’s easy to get “stuck in a rut” making the same dishes year after year.  With all the “busy-ness” that ensues it’s much easier to fall back to the good old tried and true than the come up with something new.  But, this year I decided to give it a go. 

Here are two easy, yummy side dishes you should give a try.  You may even want to add them to your own holiday repertoire for years to come.  I know I will.

The first are these delicious carrots from Bob’s Chop and Steak House.

My husband and I went to his company Christmas party and Bob’s Chop and Steak House in Grapevine and really loved the taste of these carrots.  The presentation was unusual, too, with just one giant carrot gracing the plate.  Since I was having a dinner party a couple of nights later I googled them out of curiosity and was pleasantly surprised to find the recipe printed out for all to see:

8 Servings

Ingredients:

8 Large Carrots, peeled

Group 1:

16 Ounces Fresh Orange Juice

1 Cup Light Brown Sugar

1/4 Cup of Water

1 Tablespoon of Ground Cinnamon

Group 2:

1/8 Cup of Corn Starch

1/8 Cup of Water

Preparation Instructions:

1)  Add ingredients from Group 1 to a large sauce pan and bring to a boil.  Reduce heat.

2)  In a separate bowl, mix Group 2 ingredients until there are no lumps

3) Add Group 2 to the heated sauce pan and return to a boil.  When the glaze is thick enough to coat the back of a spoon, remove from heat.

4) Boil carrots until fork tender.  Drain well.

5) Add carrots to glaze and soak at low temperature for 5 to 10 minutes

6)  Pour excess glaze over carrots.  Serve one carrot per person.

And, voila!   Delicious!

SPINACH

Sautéed Portobello’s and Spinach

Ingredients:

3 Tablespoons Butter

2 Large Portobello Mushrooms Sliced

1 (10 ounce) Package Frozen Chopped Spinach, Thawed and Drained

1/4 Teaspoon Dried Basil

1/4 Teaspoon Salt

1/4 Teaspoon Black Pepper

1 Clove Garlic, Chopped

2 Tablespoons Dry Red Wine

1/4 Cup Grated Parmesan Cheese

Directions:

1)  Melt butter in a large skillet or sauté pan over medium heat.  Sauté mushrooms, spinach, basil, salt, pepper and garlic until mushrooms are tender and spinach is heated through.

2)  Pour in wine and reduce heat to low; simmer 1 minute.  Stir in Parmesan cheese and serve

And, again….voila!  Easy and delicious!
