TASTY TUESDAY: EGG AND BANANA PANCAKES!

Some of you out there may have heard of this recipe before, but until a couple of weeks ago I never had.

It sounds like a really weird combination, but amazingly it tastes just like a light and fluffy pancake.

For real.

My husband actually saw the recipe on Facebook and thought he’d give it a whirl so he cooked it for my daughter and I when she was in town.  Needless to say it was an instant hit.

A healthier alternative to the good ole’ pancake.

For each pancake you’ll need one whole banana…

Cut it up into pieces, then mash it all up.

Add one egg

Mix it all together until you have a gooey batter.

Then pour it into a sprayed pan.  Cook till firm.

Flip it and cook the other side.

Move it to your plate and top with syrup.

If you use this syrup it’s only 15 calories for per 1/4 cup.  It’s runnier than the thick higher calorie syrup, but for me it gives me that syrupy taste so it works. (Not so much for my husband)

And I don’t have to feel guilty about adding a lot of calories like I would with regular syrup.

And, mmmmmmm…….boy oh boy is it yummy.

Light, fluffy, heathy.

You gotta give it a try.
